Toasted Cauliflower Rice

Toasted cauliflower rice is a great substitute for brown rice. It provides just the right texture when you are wanting that rice-like feel, and on top of that, it is very tasty!
Ingredients
  • 1 medium head of cauliflower
  • 2 T olive oil
  • sea salt and black pepper to taste
  • handful of chopped fresh parsley, optional
Instructions
  1. Preheat oven to 350F.
  2. Cut cauliflower into florets and wash.
  3. Add cauliflower florets to a electric food processor.
  4. Slowly pulse until cauliflower is the size of rice grains.
  5. Brush a baking pan with olive oil.
  6. Spread the processed cauliflower evenly onto the pan in a single layer.
  7. Bake for 10-15 minutes or until cauliflower is no longer moist and lightly browned.
  8. Season with salt, pepper, and parsley or your favorite sauce.
