Mediterranean Halibut

The flavors of fresh basil, bell peppers, and halibut combine deliciously creating a dish you won't soon forget.
Ingredients
- 4 large halibut fillets
- salt and pepper to taste
- 2 T chopped fresh basil, divided
- 3 T pasture butter, divided
- 2 c bell pepper (thinly sliced)
- 2 large cloves garlic, minced
Instructions
- Rinse fish, pat dry, and sprinkle both sides with salt, pepper, and 1 T of the basil.
- Melt 2 T of butter in a large skillet.
- Place fish in skillet and cook 3-4 minutes per side or until fish flakes easily when tested with a fork.
- Remove to a platter and keep warm.
- Add remaining butter to skillet and sauté bell pepper and garlic for 2-3 minutes.
- Stir in remaining basil and spoon over fish.
