Mediterranean Halibut

The flavors of fresh basil, bell peppers, and halibut combine deliciously creating a dish you won't soon forget.
Ingredients
  • 4 large halibut fillets
  • salt and pepper to taste
  • 2 T chopped fresh basil, divided
  • 3 T pasture butter, divided
  • 2 c bell pepper (thinly sliced)
  • 2 large cloves garlic, minced
Instructions
  1. Rinse fish, pat dry, and sprinkle both sides with salt, pepper, and 1 T of the basil.
  2. Melt 2 T of butter in a large skillet.
  3. Place fish in skillet and cook 3-4 minutes per side or until fish flakes easily when tested with a fork.
  4. Remove to a platter and keep warm.
  5. Add remaining butter to skillet and sauté bell pepper and garlic for 2-3 minutes.
  6. Stir in remaining basil and spoon over fish.
