Sweet Potato Chicken Sliders

Fun, festive, delicious and paleo! These sweet potato sliders will become one of you go to's for any dinner or event.
Ingredients
- 4 lg chicken breast
- 8 oz Paleo BBQ
- 1 package crinkle cut sweet potato fries, such as Alexia
- ⅓ cup drained mild yellow pepper rings
Instructions
- Place chicken in crock-pot along with 6oz bbq sauce. Cook on high 4 hours.
- Allow chicken to cool slightly and shred. toss with remaining 2 oz bbq sauce.
- Bake sweet potato fries as directed on package. Cool slightly 5 minutes.
- To assemble sliders, place 1-2 heaping tablespoons of pulled chicken on one sweet potato fry.
- Top with yellow pepper rings.
- Top with another sweet potato fry approximately the same size. Repeat until no more fries remain. Serve warm.
