Sweet Potato Chicken Sliders

Fun, festive, delicious and paleo! These sweet potato sliders will become one of you go to's for any dinner or event.
Ingredients
  • 4 lg chicken breast
  • 8 oz Paleo BBQ
  • 1 package crinkle cut sweet potato fries, such as Alexia
  • ⅓ cup drained mild yellow pepper rings
Instructions
  1. Place chicken in crock-pot along with 6oz bbq sauce. Cook on high 4 hours.
  2. Allow chicken to cool slightly and shred. toss with remaining 2 oz bbq sauce.
  3. Bake sweet potato fries as directed on package. Cool slightly 5 minutes.
  4. To assemble sliders, place 1-2 heaping tablespoons of pulled chicken on one sweet potato fry.
  5. Top with yellow pepper rings.
  6. Top with another sweet potato fry approximately the same size. Repeat until no more fries remain. Serve warm.
