Chicken Divan

Chicken seasoned with curry and coriander and then cooked with a cashew sauce and broccoli. A one pot paleo dish that the whole family can enjoy!
Ingredients
- 2 c Diced Chicken Breasts
- 2 c Broccoli Florets
- 1 c Raw Cashews (not the roasted kind!)
- 2 Cloves Garlic
- 1 c White or Yellow Onion, Large Dice
- 1 c Organic Chicken Stock
- 1 t Kosher Salt
- 1.5 t Curry Powder
- ½ t Ground Coriander
- 1 t Dill
- 1 t Parsley
- 10 Grinds Fresh Black Pepper
- Grassfed Butter
- ½ c Hazelnut or Almond Meal
- 1 c Chicken Broth
Instructions
- Preheat oven to 375 f
- Chop chicken into large bite sized pieces
- Heat a large sauté pan with butter
- Add chicken to pan and season with salt and pepper and brown the outside but don't cook chicken through
- While chicken cooks place raw cashews in food processor with 1 cup hot water or chicken broth
- Blend smooth
- Add remaining seasonings, onion and blend
- In a large casserole dish add chicken, cashew sauce, and broccoli
- Mix well and top with hazelnut meal. place in oven for 30 minutes. sides will brown and crust.
- Let cool for 5 minutes and serve.
