Chicken Divan

Chicken seasoned with curry and coriander and then cooked with a cashew sauce and broccoli. A one pot paleo dish that the whole family can enjoy!
Ingredients
  • 2 c Diced Chicken Breasts
  • 2 c Broccoli Florets
  • 1 c Raw Cashews (not the roasted kind!)
  • 2 Cloves Garlic
  • 1 c White or Yellow Onion, Large Dice
  • 1 c Organic Chicken Stock
  • 1 t Kosher Salt
  • 1.5 t Curry Powder
  • ½ t Ground Coriander
  • 1 t Dill
  • 1 t Parsley
  • 10 Grinds Fresh Black Pepper
  • Grassfed Butter
  • ½ c Hazelnut or Almond Meal
  • 1 c Chicken Broth
Instructions
  1. Preheat oven to 375 f
  2. Chop chicken into large bite sized pieces
  3. Heat a large sauté pan with butter
  4. Add chicken to pan and season with salt and pepper and brown the outside but don't cook chicken through
  5. While chicken cooks place raw cashews in food processor with 1 cup hot water or chicken broth
  6. Blend smooth
  7. Add remaining seasonings, onion and blend
  8. In a large casserole dish add chicken, cashew sauce, and broccoli
  9. Mix well and top with hazelnut meal. place in oven for 30 minutes. sides will brown and crust.
  10. Let cool for 5 minutes and serve.
