Savory Rump Roast

Roast with carrots and onions ... A simple yet delicious paleo version of a all-time classic!
Ingredients
- 1 2-3 lb Rump Roast
- 1 T olive oil
- ¼ cup Worchester sauce
- Salt and pepper to taste
- 2 cups baby carrots
- 2 small yellow onions with ends cut off
- 3 cups beef stock
Instructions
- Preheat oven to 400F.
- Prepare roast by rubbing with Worchester sauce, salt, and pepper.
- Pour 1 T of olive oil in skillet and heat.
- Brown meat on all sides.
- Place browned roast in baking dish and surround with carrots, 2 small onions, and 3 cups of beef stock.
- Cook for 3 hrs covered.
- Remove and let rest for 5 minutes. The roast should slice and fall apart easy.
