Savory Rump Roast

Roast with carrots and onions ... A simple yet delicious paleo version of a all-time classic!
Ingredients
  • 1 2-3 lb Rump Roast
  • 1 T olive oil
  • ¼ cup Worchester sauce
  • Salt and pepper to taste
  • 2 cups baby carrots
  • 2 small yellow onions with ends cut off
  • 3 cups beef stock
Instructions
  1. Preheat oven to 400F.
  2. Prepare roast by rubbing with Worchester sauce, salt, and pepper.
  3. Pour 1 T of olive oil in skillet and heat.
  4. Brown meat on all sides.
  5. Place browned roast in baking dish and surround with carrots, 2 small onions, and 3 cups of beef stock.
  6. Cook for 3 hrs covered.
  7. Remove and let rest for 5 minutes. The roast should slice and fall apart easy.
