Tuna Casserole

A delicious tuna casserole made with spinach, coconut milk, manchego cheese and hazelnut meal.
Ingredients
- 2 Large Packages of Tuna
- 2 c Baby Spinach
- 1 Small Diced Onion
- 2 Beaten Eggs
- ⅓ c Coconut Milk
- 1 t Minced Garlic
- 1 T Dried Parsley
- 1 T Hazelnut Meal
- ½ c Shredded Manchego Cheese
Instructions
- Preheat oven to 400F
- Mix together all above ingredients
- Pour into a small casserole dish
- Sprinkle with manchego cheese and hazelnut meal
- Cook 30 minutes let cool for a few minutes to firm and serve.
