Tuna Casserole

A delicious tuna casserole made with spinach, coconut milk, manchego cheese and hazelnut meal.
Ingredients
  • 2 Large Packages of Tuna
  • 2 c Baby Spinach
  • 1 Small Diced Onion
  • 2 Beaten Eggs
  • ⅓ c Coconut Milk
  • 1 t Minced Garlic
  • 1 T Dried Parsley
  • 1 T Hazelnut Meal
  • ½ c Shredded Manchego Cheese
Instructions
  1. Preheat oven to 400F
  2. Mix together all above ingredients
  3. Pour into a small casserole dish
  4. Sprinkle with manchego cheese and hazelnut meal
  5. Cook 30 minutes let cool for a few minutes to firm and serve.
