Italian Wedding Soup

This delicious Italian Wedding Soup is great all year round. Be careful with the meatballs since they don't contain breadcrumbs, they will be a little more fragile.
Ingredients
Soup:
- 1.5 qt Organic Chicken Broth
- 1 c Spinach, chopped
- 1 t Onion Powder
- 1 T Chopped Parsley
- 1 t Sea Salt
- ½ t Pepper
- ½ t Garlic Powder
Meatballs:
- 1 Egg
- ½ c Pecorino Romano (sheep cheese)
- 1 Small Onion
- 1 t Sea Salt
- ½ t Pepper
- 1 t Garlic Powder
- 2 lbs Ground Turkey or Beef
- 2 T Coconut Oil
Instructions
- In a bowl, combine all meatball ingredients.
- Shape into 1 inch balls.
- Fry in coconut oil until done and set aside.
- Mix other ingredients in a saucepan and bring to a boil.
- When spinach is wilted, add the meatballs back in.
- Garnish with grated raw organic cheese if desired and serve.
