This delicious Italian Wedding Soup is great all year round. Be careful with the meatballs since they don't contain breadcrumbs, they will be a little more fragile.
Ingredients
Soup:
1.5 qt Organic Chicken Broth
1 c Spinach, chopped
1 t Onion Powder
1 T Chopped Parsley
1 t Sea Salt
½ t Pepper
½ t Garlic Powder
Meatballs:
1 Egg
½ c Pecorino Romano (sheep cheese)
1 Small Onion
1 t Sea Salt
½ t Pepper
1 t Garlic Powder
2 lbs Ground Turkey or Beef
2 T Coconut Oil
Instructions
In a bowl, combine all meatball ingredients.
Shape into 1 inch balls.
Fry in coconut oil until done and set aside.
Mix other ingredients in a saucepan and bring to a boil.
When spinach is wilted, add the meatballs back in.
Garnish with grated raw organic cheese if desired and serve.
