Cranberry Pecan Side Salad

This simple side salad is quick to whip up and goes along great with just about any main dish. The cranberries, nuts, and spinach make for a great flavor combination!
Ingredients
- 4 c baby spinach leaves
- ¼ c chopped pecans
- ¼ c unsweetened cranberries
- ½ c grape or cherry tomatoes, sliced
- 2 green onions, sliced
- ½ lemon
- 2 T extra virgin olive oil
Instructions
- Put spinach into a large bowl.
- Top with pecans, cranberries, tomatoes, and green onions.
- Drizzle with olive oil.
- Squeeze lemon juice over salad.
- Toss and serve.
