This simple side salad is quick to whip up and goes along great with just about any main dish. The cranberries, nuts, and spinach make for a great flavor combination!
Ingredients
4 c baby spinach leaves
¼ c chopped pecans
¼ c unsweetened cranberries
½ c grape or cherry tomatoes, sliced
2 green onions, sliced
½ lemon
2 T extra virgin olive oil
Instructions
Put spinach into a large bowl.
Top with pecans, cranberries, tomatoes, and green onions.
Drizzle with olive oil.
Squeeze lemon juice over salad.
Toss and serve.
