Beef Roast with Sweet Potato

This is the perfect meal for a cold winter day. The beef roast slow cooked with sweet potato and spices make for a delicious dish!
Ingredients
  • 1 (3 lb) beef roast
  • salt, pepper, and allspice to taste
  • 6 cloves garlic, minced
  • extra-virgin olive oil
  • bay leaves
  • 2 sweet potatoes, peeled and sliced
Instructions
  1. Preheat oven to 320F.
  2. Grease the bottom of a baking pan with olive oil.
  3. Add potato slices in a single layer to baking pan.
  4. Remove visible fat from roast and place in baking pan on top of potatoes.
  5. Season and cut gashes, inserting cut garlic cloves, and bay leaves.
  6. Brush the meat with extra-virgin olive oil.
  7. Place roast in oven and cover.
  8. Bake for 3 hours.
  9. Uncover and bake for 1 hour more. (Cooking times may vary depending on size and cut of roast). For a more tender roast, cook on low in crock pot for 8-10 hours.
