Beef Roast with Sweet Potato

This is the perfect meal for a cold winter day. The beef roast slow cooked with sweet potato and spices make for a delicious dish!
Ingredients
- 1 (3 lb) beef roast
- salt, pepper, and allspice to taste
- 6 cloves garlic, minced
- extra-virgin olive oil
- bay leaves
- 2 sweet potatoes, peeled and sliced
Instructions
- Preheat oven to 320F.
- Grease the bottom of a baking pan with olive oil.
- Add potato slices in a single layer to baking pan.
- Remove visible fat from roast and place in baking pan on top of potatoes.
- Season and cut gashes, inserting cut garlic cloves, and bay leaves.
- Brush the meat with extra-virgin olive oil.
- Place roast in oven and cover.
- Bake for 3 hours.
- Uncover and bake for 1 hour more. (Cooking times may vary depending on size and cut of roast). For a more tender roast, cook on low in crock pot for 8-10 hours.
