Roast with Dijon and Cracked Pepper

This savory recipe is hearty and satisfying. The mustard and herbs combine with the beef flavor for a perfectly delectable dish!
Ingredients
- 1 (2-3 lb) boneless roast
- ¼ c dijon mustard
- 2 T chopped fresh herbs (such as rosemary, thyme, marjoram, and parsley)
- 1 T garlic, minced
- 2 t pepper
- 1.5 c beef broth
- ¼ c Worcestershire sauce, optional
- 1 (16 oz) pkg tri-colored baby carrots
Instructions
- Place roast fat side up on a large pan.
- Spread mustard on top and sides of roast.
- Sprinkle with herbs, garlic, and pepper, pressing to coat roast.
- Pour beef broth and Worcestershire sauce into crockpot, place roast in the center, and add carrots.
- Cook on low 8-10 hours or until roast shreds easily with a fork.
