Tomato Poached Sea Bass

This tomato poached sea bass recipe is super healthy and even more delicious. This is paleo food done right!
Ingredients
  • 4 (6 oz) sea bass fillets (deboned and skinned)
  • ½ T olive oil
  • 1 large poblano pepper, diced and deseeded
  • 1 large green chili, diced
  • ½ yellow onion, diced
  • 1 jar fire roasted tomatoes
  • 1 jar diced tomatoes
  • 2 cloves minced garlic
  • ½ t ground white pepper
  • 2 T fresh chopped cilantro
  • Sea salt to taste
Instructions
  1. In a large skillet heat oil over medium heat.
  2. Add diced onion, garlic and diced peppers.
  3. Cook 3-5 minutes until al dente.
  4. Stir in fire roasted tomatoes and cook 1-2 minutes.
  5. Add regular diced tomatoes and stir blending well.
  6. Season fish with sea salt and white pepper and add to skillet and cover with some of the tomato mixture.
  7. Cover and reduce to simmer for 8-10 minutes.
  8. Fish should be flaky and tender.
  9. Remove and plate and top with fresh cilantro and serve.
