Scalloped Sweet Potatoes

This sweet potato side dish is creamy and flavorful. It makes the perfect compliment to a fancy steak dinner.
Ingredients
- 2 small sweet potatoes, sliced ¼ in. thick
- ½ one medium onion, peeled and grated
- 1½ c of full fat coconut milk
- 1 T coconut flour
- ½ c Romano sheep cheese, grated
- ¼ c Lamb chopper sheep cheese, shredded
- ¼ t fresh ground black pepper
- 1 T fresh parsley, chopped
- ⅛ t nutmeg
- 1 t sea salt
- ½ t fresh sage, finely chopped
Instructions
- In a small bowl, add coconut milk, grated onion, cheeses, salt, sage, coconut flour, nutmeg and ground black pepper, fresh parsley and mix.
- In an 8 x 8 square casserole dish, put one layer of sweet potatoes on the bottom, and pour ¼ cup of the milk mixture over the top.
- Repeat until you have three layers or run out of potatoes. Your final layer should be the milk mixture.
- Place the dish in the oven at 350 degrees and bake for 1 hour.
