Sausage and Chicken Jambalaya

This delicious Sausage and Chicken Jambalaya is a paleo version of the Cajun classic. All the flavors and spice of the original without the starch!
Ingredients
- 3 large chicken breasts, cut into bite-size pieces
- 1 lb beef sausage, sliced thin and with pork casing removed
- ¼ c olive oil
- 1 large yellow onion, chopped
- 2 large red bell pepper, chopped
- 2 cloves of garlic, minced crushed
- 1 28 oz can diced tomatoes, undrained
- 2 c chicken stock
- 1 t dried leaf thyme
- 1 t oregano
- 1 T fresh parsley
- 1 t chili powder
- 1 t paprika
- Sea Salt and pepper to taste
Instructions
- Heat the olive oil and lightly cook the sausage and chicken over medium heat in a large skillet.
- Once golden, add onion, bell pepper and garlic and sauté until onion becomes translucent.
- Transfer items from the frying pan into a large pot.
- Add diced tomatoes, chicken broth, thyme, oregano, parsley, chili powder and paprika and bring to a simmer.
- Let simmering, uncovered for about 40 minutes, stirring occasionally.
- Add salt and pepper to taste and adjust other spices as needed.
- Serve piping hot.

We made this tonight and loved it! It’s has a kick but not too much! Definitely a keeper!
