Sausage and Chicken Jambalaya

This delicious Sausage and Chicken Jambalaya is a paleo version of the Cajun classic. All the flavors and spice of the original without the starch!
Ingredients
  • 3 large chicken breasts, cut into bite-size pieces
  • 1 lb beef sausage, sliced thin and with pork casing removed
  • ¼ c olive oil
  • 1 large yellow onion, chopped
  • 2 large red bell pepper, chopped
  • 2 cloves of garlic, minced crushed
  • 1 28 oz can diced tomatoes, undrained
  • 2 c chicken stock
  • 1 t dried leaf thyme
  • 1 t oregano
  • 1 T fresh parsley
  • 1 t chili powder
  • 1 t paprika
  • Sea Salt and pepper to taste
Instructions
  1. Heat the olive oil and lightly cook the sausage and chicken over medium heat in a large skillet.
  2. Once golden, add onion, bell pepper and garlic and sauté until onion becomes translucent.
  3. Transfer items from the frying pan into a large pot.
  4. Add diced tomatoes, chicken broth, thyme, oregano, parsley, chili powder and paprika and bring to a simmer.
  5. Let simmering, uncovered for about 40 minutes, stirring occasionally.
  6. Add salt and pepper to taste and adjust other spices as needed.
  7. Serve piping hot.
