Saucy Meatballs over Cauliflower Mash

This recipe is a complete paleo meal with hearty meatballs, a savory sauce, and creamy cauliflower mashers.
Ingredients
- 1½ grass-fed ground beef
- 1 white onion, diced small
- 1 T dried parsley flakes
- Sea salt and pepper, to taste
- 1 large egg
- 1 16 oz bag frozen cauliflower
- 1 cup beef stock
- 2 T course ground mustard
- 2 T paleo ketchup
- 3 T Worcestershire sauce
- ¼ c almond meal
- 4 T pasture butter
- 2 T pure maple syrup
Instructions
- Preheat oven to 350F.
- In a large bowl, mix ground beef, diced onion, salt, pepper, egg, mustard, ketchup, dried parsley, almond meal and 1 T Worchester and mix well.
- Roll into 1.5 inch balls and place on baking sheet.
- Bake in oven for 25 minutes.
- While meatballs are cooking, steam cauliflower till soft.
- Blend smooth with 2T butter.
- In a small sauce pan heat beef stock, maple syrup and 2 T Worchester on medium heat, and allow to simmer 10 minutes.
- When meat balls are done place in sauce.
- Place cauliflower mash equally in bowls and top with meatballs and sauce.
