Roast with Dijon and Cracked Pepper

This savory recipe is hearty and satisfying. The mustard and herbs combine with the beef flavor for a perfectly delectable dish!
Ingredients
  • 1 (2-3 lb) boneless roast
  • ¼ c dijon mustard
  • 2 T chopped fresh herbs (such as rosemary, thyme, marjoram, and parsley)
  • 1 T garlic, minced
  • 2 t pepper
  • 1.5 c beef broth
  • ¼ c Worcestershire sauce, optional
  • 1 (16 oz) pkg tri-colored baby carrots
Instructions
  1. Place roast fat side up on a large pan.
  2. Spread mustard on top and sides of roast.
  3. Sprinkle with herbs, garlic, and pepper, pressing to coat roast.
  4. Pour beef broth and Worcestershire sauce into crockpot, place roast in the center, and add carrots.
  5. Cook on low 8-10 hours or until roast shreds easily with a fork.
