Italian Flat Bread Pizza

This slightly sweet Italian pizza dish is completely paleo and absolutely delicious.... you won't even miss the grains!
Ingredients
- 2 Italian flat breads
- ½ lb smoked uncured turkey kielbasa
- 1 c fresh spinach
- ½ yellow or white onion
- 1 c tomato paste or sauce
- ½ c sliced black olives
- 8 oz. Manchego cheese sliced thin. about ⅛ inch
- 2 T Fine Romano sheep cheese
Instructions
- Preheat oven to 350F.
- Make Italian flat breads according to instructions.
- Slice sausage, onion, olive, spinach, and cheese.
- Once crust is cooked and cooled to room temp, spread tomato sauce across top of flat bread crust.
- Add ½ the sliced Manchego cheese.
- Add Half the sliced sausage, spinach, onion and olive.
- Top with 1 T sprinkled Romano cheese.
- Repeat on the additional flat bread crust.
- Bake for 15 Minutes.
- Turn on Broiler to high for 2-3 minutes to crisp up top of pizza. Make sure you watch close during the broiler time as it can burn quickly.
