This Italian chicken dish is simple yet tasty enough to quickly become a family favorite!
  • 4 Boneless Skinless Chicken Breasts
  • ¼ c Extra Virgin Olive Oil
  • ⅔ c Water
  • 1 T Sea Salt
  • 2 or 3 Cloves of Minced Garlic
  • ½ t Oregano
  • ½ t Basil
  • ¼ t Parsley
  • ⅓ c Grated goat cheddar or manchego sheep cheese
  1. Preheat the oven to 450º.
  2. Place the chicken breasts in a 9x13" or other shallow baking dish.
  3. Mix the water, olive oil and 1 tablespoon of sea salt, and poor mixture over the chicken.
  4. Spread the minced garlic, basil, oregano, parsley, salt and pepper to taste evenly over the chicken. Bake for 15 minutes.
  5. Add cheese and place chicken back in oven for 5-7 minutes or until chicken is fully cooked and cheese is melted.
  6. Remove the dish and drain off excess fluid, leaving the chicken in the baking dish.
  7. Let cool for a minute or two and serve.
