Grilling eggplant is a great way to add some variety to the texture and flavor of your side dishes.
  • 2 large eggplants
  • sea salt
  • 1 T olive oil
  1. Preheat grill.
  2. Wash and slice egg plant into ¾ inch slices.
  3. Season with salt and place on grill brushed well with olive oil.
  4. Cook 3-5 minutes on med-low heat.
