Grilling eggplant is a great way to add some variety to the texture and flavor of your side dishes.
- 2 large eggplants
- sea salt
- 1 T olive oil
- Preheat grill.
- Wash and slice egg plant into ¾ inch slices.
- Season with salt and place on grill brushed well with olive oil.
- Cook 3-5 minutes on med-low heat.
