Green Beans Braised in Tomatoes

This is a tasty green bean side dish that incorporates onion, tomatoes and parsley.
Ingredients
  • 2 T olive oil
  • 1 small onion, diced
  • 2 small cloves garlic, minced or pressed through a garlic press
  • 1 c canned chopped tomatoes
  • 1 lb green beans, stem ends snapped off
  • sea salt
  • ground black pepper
  • 2 T minced parsley
Instructions
  1. Heat oil in a large sauté pan over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and continue cooking another minute.
  4. Add tomatoes and simmer until juices thicken slightly, about 5 minutes.
  5. Add green beans, ¼ t salt, and a few grindings of pepper to pan.
  6. Stir well, cover and cook, stirring occasionally, until beans are tender but still offer some resistance, about 20 minutes.
  7. Stir in parsley and adjust seasonings to taste.
