Cucumber Turkey Sub

This cucumber turkey sub is the perfect paleo sandwich for lunch on-the-go!
  • 1 cucumber peeled and sliced in half long ways.
  • ½ small avocado (smushed for spread)
  • 1 tsp mustard
  • 2 slices turkey or chicken
  • 1 T shredded carrot
  • ¼ c baby spinach
  • 1 T manchego shredded cheese, optional
  1. Peel and slice cucumber And cut length wise
  2. On half cucumber spread avocado
  3. On other half spread mustard
  4. Layer spinach, turkey, cheese and carrot
  5. Stack cucumber and slice.
