Cucumber Turkey Sub

This cucumber turkey sub is the perfect paleo sandwich for lunch on-the-go!
Ingredients
- 1 cucumber peeled and sliced in half long ways.
- ½ small avocado (smushed for spread)
- 1 tsp mustard
- 2 slices turkey or chicken
- 1 T shredded carrot
- ¼ c baby spinach
- 1 T manchego shredded cheese, optional
Instructions
- Peel and slice cucumber And cut length wise
- On half cucumber spread avocado
- On other half spread mustard
- Layer spinach, turkey, cheese and carrot
- Stack cucumber and slice.
