Featured Recipe: Cucumber Turkey Sub

There are a few things that are hard to give up when going paleo purely out of convenience sake, and sandwiches are definitely one of them. We have made a few different paleo “breads” in the past and while they might do the trick for satisfying the bread craving, they really aren’t very convenient. Not many people in this day and age bake their own bread when they are needing to make a quick sandwich, so that’s why I love this recipe! The crisp cucumber is holds it all together, is quick to prepare, and makes for the perfect finger food. No baking needed! Check it out.

Ingredients:

  • 1 cucumber peeled and sliced in half long ways.
  • ½ small avocado (smushed for spread)
  • 1 tsp mustard
  • 2 slices turkey or chicken
  • 1 T shredded carrot
  • ¼ c baby spinach
  • 1 T manchego shredded cheese, optional

Instructions:

Step 1: Peel cucumber.

Step 2: Slice cucumber lengthwise.

Step 3: On half of cucumber, spread avocado, and on other half spread mustard.

Step 4: Layer spinach, turkey, and carrot

Step5: Shred cheese and add to top of turkey.

Step 6: Stack cucumber, slice in half, and serve.
