Baked Cheesy Zucchini Fries

These zucchini fries make an excellent healthy and tasty substitute for french fries!
Ingredients
- ½ c almond meal
- ½ c fine grated Romano cheese
- 1 t. garlic powder
- 1 t Italian seasoning mix
- ½ t. black pepper
- 4 medium zucchinis
- ½ cup coconut milk
- (This recipe does not need salt because of the Romano cheese.)
Instructions
- Preheat oven to 425F
- Wash zucchini and cut into large julienne pieces. I use my mandolin to achieve this.
- Allow cut Zucchini to sit on paper towels while you continue prep. This allows some of the water content to leave the zucchini for a crisper "fry."
- Mix almond meal, Romano cheese, garlic powder, Italian seasoning and pepper.
- Dip zucchini in coconut milk and then place in large zip lock bag with almond, cheese mixture.
- Shake vigorously.
- Remove zucchini and place on cookie sheet lined with parchment paper.
- Place in preheated oven for 15-20 minutes, flipping halfway through baketime. Serve with Paleo Ranch if desired.
