Probably the snack that my husband and I most often “cheat” on is corn tortillas chips and salsa. It is absolutely our FAVORITE salty snack. So naturally when Celia suggested featuring one of her famous salsa recipes, I was immediately on-board but with one stipulation … that she came up with a paleo “tortilla chip” recipe as well! The two recipes she landed on are both seriously DELISH. The salsa has just enough kick with that fresh homemade taste that can’t be found in the store-bought jars. And the chips provide the crunch you crave and make for the perfect vehicle for getting the yummy salsa to your mouth! Another great thing about these chips is that they are more filling and less addicting than typical tortilla chips. You will fill up quicker, eat less, yet still feel absolutely satisfied! Check it out.

I almost gave up on feeding my family cod, but the recipe Cajun Cod is now in our recipe book. It was a bit too spicy for my daughter so I coated her fillet and then gave it a quick rinse before cooking it; this gave the fish a great flavoring that was just right for her.
