Hey everyone!
Today I’m featuring a super yummy creation that my friend (and right hand woman), Celia, introduced to me! Over the past three weeks, the hubs and I have been participating in a fast with our church, so we have had to incorporate some non-traditional eats into our everyday menu. This bacon “sandwich” has been one of our favorites! I’m not a huge bacon eater, but there is absolutely nothing quite like the crunch and flavor of a classic BLT. I was pleasantly surprised that this bread-less, pork-less entrée really did make a great substitute to one of my favorite sandwiches! So here’s how we made it:
Ingredients:
- 1 package Turkey bacon (makes about 5 sandwiches)
- 1-2 roma tomatoes, sliced thin
- 1 ripe avocado
- 1 tbsp paleo mayonnaise
Paleo Mayonnaise:
- 1 Large Egg
- ½ t Sea Salt
- ¼ t Dry Mustard
- 2 t Lemon Juice, fresh squeezed
- ⅔ c extra light tasting olive oil
- 2 T avocado oil
Step 1: Preheat oven to 400F. While preheating, slice bacon in half.
Step 2: Separate bacon and start weaving 4 pieces to make one slice of “bread”, repeat process until all bacon is woven.
Step 3: Place bacon in oven and allow to crisp up. It will take longer because of the overlapping, about 30 minutes. Carefully flip about halfway through cook time.
Step 4: While bacon is cooking, slice avocado and tomato.
Step 5: Make your fresh paleo mayo.
Step 6: Once bacon is cooked, remove and let cool.
Step 7: When cool to handle, take one piece of “bread” and add avocado. Smash the avocado to make it hold the bacon together.
Step 8: Layer the sliced tomato on top and add paleo mayo.
Step 9: Serve and enjoy.
