Wondering what to bring to that upcoming Christmas party that won’t completely throw you off your healthy eating wagon?! Well, look no further. This Paleo Fruit Cake is just the dish you are looking for. Completely grainless and sweetened only with fruit, it’s a real food dish that really satisfies!
Ingredients:
- 2 ripe bananas
- 2 c almond meal
- ⅛ c hazelnut meal
- ½ t baking powder
- 3 eggs
- 5 T melted butter
- 1 t cinnamon
- 1½ c dried fruit (I used dried mango, cherries, cranberries, dates, figs, apricots)
- 1 c mixed nuts (I used pecans, walnuts and pistachios)
Instructions:
Preheat to 350F. In a large bowl mash and smooth bananas.
Add eggs and melted butter and blend smooth.
In a separate bowl mix all dry ingredients (almond meal, hazlenut meal, baking powder and cinnamon.)
Slowly add dry ingredients to wet and combine well.
In a food processor add dried fruits and give a rough chop.
Repeat process for nuts.
Fold in chopped fruit into batter and then nuts.
In a loaf pan lay a piece of parchment paper.
Spoon batter into pan.
Trim excess of parchment paper.
Place in oven for 35-40 minutes. Remove from oven and cool at least 20 minutes.
Serve with butter warm or chilled.
