Sliced Flank Steak with Roasted Peppers

The delicious balsamic marinade in this recipe makes this flank steak dish juicy and tender.
Ingredients
- 1 flank steak, approximately ¾ to 1 lb
- 4 T olive oil
- 2 T balsamic vinegar
- ¼ t sea salt
- ¼ t black pepper
- 1 bunch of arugula leaves or greens of your choice
- 3 -4 roasted red peppers, julienned
- ½ small red onion, julienned
- 2 large avocado, sliced
Instructions
- Whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Place the flank steak in a medium sized, rectangular dish and pour in marinade. Let sit for 2-4 hours, turning a few times to evenly distribute marinade.
- Preheat broiler.
- Broil steak for 8 minutes on each side.
- Remove from the oven and let sit for 5 minutes.
- Arrange arugula on plates and top with roasted red peppers, red onions, and avocado slices.
- Slice steak into thin pieces and place on top of salad.
- Drizzle with olive oil and serve.
