Green and Red Salad

Fresh vegetable salad that has the refreshing flavor of cucumber, tomato and avocado to keep you cool on those hot summer days.
  • 1 c Cherry Tomatoes
  • 1 Small Cucumber, Sliced and Quartered
  • 1 Large Avocado, Diced
  • 2 T Red Onion, Diced
  • 2 T Minced Parsley
  • 1 T Olive Oil
  • 1 T Herbs De Provence
  • 1 t Red Wine Vinegar
  • Salt and Pepper to Taste
  • Feta Crumbles Optional
  1. Toss together ingredients and refrigerate for one hour.
