Featured Recipe: Authentic Red Salsa

Need something nutritious yet delicious to spice up your recipes? This fresh homemade red salsa is the perfect thing to do just that! We have so enjoyed having it on hand this week to add flavor and nutrients to our eggs and our salads. Not even gonna lie … I’ve even enjoyed it by the spoonful. (This Whole30 thing can make you do strange things.) Check it out!
Ingredients:
  • 6 Roma tomatoes, diced
  • 1 jar diced tomatoes (juice reserved)
  • 1 green onion
  • 1 white onion small, diced
  • 2 jalapeños, halved
  • ½ c fresh cilantro
  • 1 t cumin
  • 2 T green chilis
  • Juice of 2 limes approx 2 T
  • 5 cloves minced garlic
  • 1½ t sea salt

Instructions:
Dice Roma tomatoes and add to bowl along with minced garlic and 1/2 diced onion.

Add remaining diced onion to food processor. Drain canned tomatoes and reserve juice. Add tomatoes to food processor along with jalapeño, green chilis, cumin, salt, and pulse until desired consistency reached. Some like smoother salsa some like chunky.

Pour 3/4 of mixture into the large bowl of diced onion and tomato. Reserve the remaining ¼ in food processor and add cilantro. Blend until desired consistency reached. Add reserved tomato juice if you’d like. Combine cilantro mix with the rest of the salsa. Allow to chill for 1-2 hours but it only gets better with time.

Serve chilled atop salad or eggs, with homemade paleo tortilla chips, or alongside your favorite Latin or Mexican dish.

  4. Add reserved tomato juice if you'd like.
  5. Add cilantro mixture to rest of salsa.
  6. Allow to chill for 1-2 hours but it only gets better with time.
