Chimichurri is an Argentine sauce typically used with red meat, but it is also excellent with fish and seafood!

Chimichurri is an Argentine sauce typically used with red meat, but it is also excellent with fish and seafood!
Ingredients
  • 6 Cloves Garlic
  • 2 c Cilantro, lightly packed, stems removed
  • 2 c Italian Flat Leaf Parsley, packed, stems removed
  • 1 t Sea Salt
  • ½ t Cumin
  • ⅔ c White Wine Vinegar
  • 1 t Crushed Red Pepper
  • 1 c Olive Oil
Instructions
  1. Place cilantro, parsley, sea salt, cumin, white wine vinegar and crushed red pepper in a food processor.
  2. Turn food processor on, while it is processing slowly add in the olive oil until the mixture emulsifies, about 1 minute.
  3. You will have a smooth sauce.
  4. Keep at room temperature until ready to serve.
