Chicken Diane

A classic recipe that is easy to cook for any skill level.
Ingredients
  • 4 boneless, skinless chicken breast halves
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 Tbsp olive oil
  • 2 Tbsp butter
  • juice of ½ lemon
  • 3 Tbsp chopped parsley
  • 2 tsp Dijon mustard
  • ¼ cup chicken broth
Instructions
  1. Place chicken breast halves between sheets of waxed paper or plastic wrap. Pound slightly with mallet. Sprinkle with salt and pepper.
  2. Heat 1 tablespoon each of olive oil and butter in large skillet.
  3. Cook chicken over high heat for 4 minutes on each side. Do not cook longer or they will be overcooked and dry.
  4. Transfer to warm serving platter. Add green onions, lemon juice, parsley and mustard to pan. Cook 15 seconds, whisking constantly. Whisk in broth. Stir until sauce is smooth.
  5. Whisk in remaining butter and olive oil. Pour sauce over chicken. Serve immediately.
