Butternut Squash Mash

Butternut squash mash is a delicious and nutritious substitute when you are wanting to avoid all the empty calories of starchy mashed white potatoes.
Ingredients
  • 1 butternut squash
  • 4 T pasture butter
  • 1 t cinnamon
  • 1 t nutmeg
Instructions
  1. Preheat oven to 400F.
  2. Cut squash in half lengthwise and bake face down on cookie sheet for 40 minutes.
  3. Scoop out seeds and discard.
  4. Scoop out flesh into a bowl and combine with butter and spices.
  5. Using a hand mixer, whip the squash until smooth.
  6. Return to a baking dish and bake at 350F for 20 more minutes.
