Celia is always on the hunt for quick, easy meals that are not only Dr. Brown approved but also filling and delicious! This yummy pasta-like dish fits the bill perfectly. And now that Whole Foods has started offering pre-spiraled zucchini, this type of meal has become even simpler! Check it out.
- 4 boneless, skinless chicken breast
- 3 large spiraled zucchini or 1 package store bought
- 2 T diced green onion
- 1/4 c basil leaves
- 1 avocado, creamed
- 1 T olive oil
- 1 T pepper
- Sea salt to taste
- A handful sundried tomatoes, optional
Step 1: Preheat indoor or outdoor grill.
Step 2: Coat chicken with salt, pepper and a little olive oil to prevent sticking.
Step 3: If using an indoor girl, place parchment paper on grill for easier clean up. Put chicken on top of parchment paper and fold over.
Step 4: Grill chicken until internal temperature has reached 165F.
Step 5: Chop green onions.
Step 6: Add basil, green onion and avocado into a large cup, and using an immersion blender, mix until smooth.
Step 7: In a sauce pan add olive oil, and heat.
Step 8: Add zucchini noodles to pan and stir to coat with olive oil.
