Celia has been busy cooking up recipes with her newest find from Whole Foods… paleo pancake mix! This mix by Birch Benders is 100% Dr. Brown approved and 200% delicious. Seriously. It makes some pretty amazing pancakes, but is also proving to be quite versatile. Next week we are featuring a tasty stuffed chicken recipe for our meal plan members that uses it as breading — and today we are using it as the crust for this amazing cobbler recipe. This yummy dessert will be one to share and impress your friends … that is if there is any left.
Ingredients:
- 2 large peaches, peeled, seeded, and sliced
- 6 T pasture butter
- ½ c pure maple syrup
- 1 t lemon juice
- 1 t nutmeg
- 1 t arrowroot powder
- ¼ c almond or coconut milk
- ½ c paleo pancake mix
- ½ t baking powder
- 1 t cinnamon
- pinch of salt
Instructions:
Step 1: Preheat oven to 375F.
Step 2: In an 8 inch cast iron skillet, add 1 T pasture butter and melt.
Step 3: Peel and slice peaches.
Step 4: Remove skillet after 1-3 minutes and butter is melted. Coat pan well and set aside.
Step 4: In sauce pan, add peaches, maple syrup, lemon juice, ½ t nutmeg, arrowroot powder, almond or coconut milk, and cook over medium-high heat.
Step 5: While cooking, mix paleo pancake mix, baking powder, ½ t nutmeg, cinnamon, salt, and 5 T room temperature pasture butter, and combine with a fork.
Step 6: Once peach mixture reaches a boil, remove from heat.
Step 7: Spoon peaches into cast iron pan with a slotted spoon. Reserve juice.
Step 8: Spread pancake butter mixture over peaches.
Step 9: Pour reserved boiled peach juice over entire skillet.
Step 10: Place in preheated oven for 45 minutes.
Step 11: Remove and serve with Dr. Brown approved ice cream (like coconut ice cream) if desired.
