If you need to add another quick breakfast to your rotation, this unique recipe is packed with protein and rather delicious. Cooks like a pancake, tastes somewhat like a crepe, you just can’t go wrong with these simple ingredients! Get out of the dreaded breakfast rut, and give this one a try. You’ll be glad you did!
Ingredients:
- 2 eggs, yolks removed
- 1 t cinnamon
- ½ T butter
- 4-5 small strawberries, diced
- 1 T cashew or almond butter
Instructions:
Remove yolk from 2 eggs.
Mix in cinnamon into egg whites.
Heat butter over low-medium heat (Cook low and slow ~ 5 minutes.)
Add egg white mixture, allow to cook ,and begin to set top.
Flip and repeat.
Remove egg white flat cake and plate.
Spread cashew butter on top of flat cake.
Top with sliced strawberries and serve immediately.
