Happy Summer to all my friends out there! This post will be pretty short and sweet. Between all the kiddos being home and getting ready to move at the end of the month, Celia and I have been crazy busy around here. This delicious paleo chicken salad recipe has been the perfect protein-packed snack to keep us energized. Make yourself some Sunday night and have it available throughout the week for a quick and healthy convenience food! We’ve loved having it on hand… I know you will too. =)
Ingredients:
- 1½ lbs chicken, cooked and cubed
- 1 c red seedless grapes, halved
- 1 small red onion, diced
- ½ c Dr. Brown approved mayonnaise or homemade
- 2 T chopped almonds
- 1 t sea salt
- ½ t celery seed
- black pepper, to taste
Step 1: Combine all ingredients, and chill for a minimum of 2 hours.
Step 2: Serve chilled with butter lettuce atop tomato slices, paleo crackers, or paleo bread.
