Roasted Zucchini and Carrots

Roasting vegetables always makes for a great side dish. The combo of zucchini and carrots is delicious and this particular recipe adds a little kick for a unique flavor!
Ingredients
  • 5 medium Zucchini (quartered)
  • 1 lb baby carrots (halved length wise)
  • 1 t paprika
  • 1 t fine grated garlic
  • ¼ t cayenne pepper
  • 1 T olive oil
  • 1 t salt and pepper
Instructions
  1. Preheat oven to 425F.
  2. Place zucchini and carrots on lipped baking sheet.
  3. Dust with paprika, garlic, cayenne, salt, pepper.
  4. Pour olive oil over vegetables and mix well.
  5. Place in preheated oven and let roast for 20-25 minutes.
  6. Serve hot.
