Roasted Zucchini and Carrots

Roasting vegetables always makes for a great side dish. The combo of zucchini and carrots is delicious and this particular recipe adds a little kick for a unique flavor!
Ingredients
- 5 medium Zucchini (quartered)
- 1 lb baby carrots (halved length wise)
- 1 t paprika
- 1 t fine grated garlic
- ¼ t cayenne pepper
- 1 T olive oil
- 1 t salt and pepper
Instructions
- Preheat oven to 425F.
- Place zucchini and carrots on lipped baking sheet.
- Dust with paprika, garlic, cayenne, salt, pepper.
- Pour olive oil over vegetables and mix well.
- Place in preheated oven and let roast for 20-25 minutes.
- Serve hot.
