Roasted Butternut Squash Chunks

Butternut squash is such a hearty veggie that can make a great substitute for traditional starches in a meal.
Ingredients
  • 1 medium butternut squash
  • 3 T pasture butter
  • cinnamon to taste (optional)
Instructions
  1. Preheat oven to 400F.
  2. Using a peeler, remove skin from outside of squash.
  3. Slice squash into chunks of equal size.
  4. Place chunks onto baking sheet in a single layer.
  5. Slice butter into several pieces and place on top the squash in several places so that butter melts evenly.
  6. Season squash with cinnamon if desired.
  7. Place baking sheet into preheated oven and cook for 20-25 minutes, stirring occasionally to spread the melted butter and avoid burning.
