Southwest Saute

Ingredients
- 1 T Olive Oil
- 1 Small Red Onion, Diced
- ½ t Salt
- ½ t Dried Cilantro
- 2 Red Bell Peppers
- 1 Zucchini, sliced and halved
- 1 Yellow Squash, sliced and halved
- ½ c White Wine or Vegetable Broth
Instructions
- In medium pan heat olive oil
- Add diced onion and red bell pepper, cook for a few minutes until fragrant and translucent
- Add zucchini, squash, ground cilantro and wine
- Simmer for 7-10 minutes
- Enjoy!
