Balsamic Roasted Baby Carrots

Easy to make and complex in flavor, this side dish will go with almost anything.
Ingredients
- 1 pound baby carrots, tops removed, peeled, and cleaned
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Dash of sea salt and cracked pepper
- Dried or fresh parsley for garnish
Instructions
- Preheat oven to 400 degrees
- Wash and peel carrots, pat dry
- Mix olive oil and balsamic vinegar
- Place carrots on baking sheet lined with parchment paper
- Brush carrots with balsamic mixture
- Dust with parsley, salt and pepper
- Bake for 15 minutes
- Remove and brush with balsamic mixture
- Place back in oven and cook for additional 10-15 minutes depending on size of carrots
- Remove and serve
