In a moment of desperation, Celia came up with this delicious, no-hassle soup recipe last week that surprisingly won over our WHOLE family! We literally ate it three more times for different meals throughout the week with requests for seconds each time. This will definitely be a standard go-to when needing a quick and easy dinner that will please a crowd.
Ingredients:
- 1½ lbs cooked chicken (boiled, leftover, rotisserie)
- 48 oz chicken stock
- 1 t white pepper
- 1 t sea salt
- ½ t garlic powder
- ¼ c chopped fresh cilantro
- 2 small jalapenos sliced
- ¼ c sliced green onions
Instructions:
Step 1: In a large stock pan heat stock over medium heat.
Step 2: Add pepper, salt and garlic powder.
Step 3: Bring to a boil, then reduce heat to simmer for 20 minutes.
Step 4: Chop cilantro, jalapeños, and green onions while broth is warming.
Step 5: Warm or cook chicken by preferred method. In your soup bowl add warmed chicken, green onions, jalapeños and cilantro to liking.
Step 6: Pour broth over chicken and vegetables.
Step 7: Serve and enjoy!
