Featured Recipe: Leek and Parsley Salmon

Hope everyone is enjoying the new site. Today I want to feature a delicious recipe we just added to our database. If you have never baked fish in parchment paper, you are missing out!! It really does infuse the fish with the other flavors in the recipe and prevents that dry, overcooked texture. It’s my absolute favorite way to cook fish!

This recipe also helped me discover just how much I like leeks!! Honestly, I didn’t even really know what a leek was until I tried this. And let me tell you, leeks are so delicious, especially if you are an onion fan. They are similar in taste to an onion,  but much more mild. There are no tears while chopping, and they give off an aroma that even my kiddos thought was delicious! Here is a pic of what to look for in the grocery store if you are like me and never cooked with leeks before…

Okay on to the recipe…

Ingredients
  • 4 6 oz salmon fillets
  • 1 bunch leeks, chopped and well washed
  • ¼ c dry white wine
  • 1 c extra virgin olive oil
  • 1 bunch Italian parsley, chopped
  • 2 T pasture butter, melted
  • Sea salt and ground black pepper to taste
Step one: Preheat oven to 350F.
Step two: Fold a large piece of parchment paper in half and cut a heart shape that is 3 inches bigger in height and width than the fish fillet. Place the salmon near the fold, and put a handful of chopped leeks on both sides of it as shown below.

Step three: Drizzle 1/4 of the wine and olive oil over the fillet, and season with salt, pepper, and parsley.

Step four: Brush edges of parchment paper with melted butter.

Step five: Fold paper to enclose the fish and make small overlapping folds to seal the edges, starting at the curve of the heart. Be sure each fold overlaps the one before it so that there are no gaps.

Step six: Brush the outside of the package with melted butter.
Step seven: Repeat steps 2-6 with the other 3 fillets.
Step eight: Put packages on a baking sheet, and bake until paper is puffed and brown, about 10-15 minutes.

Step nine: Carefully take fish and leeks out of the parchment paper and place onto plates.

Step ten: Serve and Enjoy!!
