Celia hit a home run with this tasty recipe. The combination of nuts, cranberries, maple syrup, feta cheese, and Brussel sprouts creates a side that is bursting with flavor and has a wonderful texture. It would be the perfect dish to bring to Christmas dinner this year and wow the whole family! And bonus it’s 100% Dr. Brown approved!
Ingredients:
- 1 lb Brussel sprouts
- ¼ c extra virgin olive oil
- ¼ c pure maple syrup
- ½ T minced garlic
- sea salt and ground black pepper to taste
- ½ c dried cranberries
- ¼ c sliced or crumbled sheep/goat feta
- ½ c chopped toasted walnuts
- ¼ c fresh cranberries
Instructions:
Step 1: Preheat to 400F.
Step 2: Wash and slice Brussel sprouts in half, removing ends and place on a shallow baking pan lined with foil.
Step 3: Mix minced garlic, olive oil, syrup, salt, and pepper in small bowl.
Step 4: Place Brussel sprouts on pan, and pour mixture on top of Brussels.
Step 5: Toss to coat evenly, place pan in oven and cook for 20 minutes.
Step 6: While sprouts are cooking, heat walnuts on low heat in a small skillet for about 5 minutes until they are golden brown and fragrant, stirring often.
Step 7: Remove brussel sprouts when golden brown.
Step 8: Allow to cool before tossing with walnuts and dried cranberries.
Step 9: Plate and top with fresh cranberries and feta.
