It’s crazy to me that Brussel sprouts have earned such a bad rap. Even though as a kid, I, too, judged them unfairly, now I’m pretty sure these misunderstood little vegetables are my very favorite. My guess is that people have just been cooking them wrong all these years. Forget boiling… it’s all about getting that crispy roasted outside and tender inside. And for that perfectly balanced texture it’s best to use the oven or grill. Even simply seasoned, they taste delish, but here is a recipe that will add a little extra zest of flavor!
Ingredients:
- 1 lb brussel sprouts washed and ends trimmed
- 2 T mustard
- 1 T olive oil
- 1 T fresh lemon juice
- Sea salt and pepper to taste
Preheat grill or oven (400F). Trim ends and wash. (Divide if large sprouts.)
Add mustard, olive oil, salt and pepper to a ziplock bag.
Drizzle with fresh lemon juice.
Grill for approx 10-15 minutes or until desired texture is reached. Remove from grill and serve hot.
This makes for a yummy side dish at your next cookout. Try it and let us know what you think!
